Vanilla Cake Recipe

Our homemade vanilla cake is full with vanilla flavor! Vanilla buttercream frosting and cake contain a spoonful of vanilla essence. This cake is wonderful for any occasion! 

– 3 cups (345 grams) cake flour (spooned & leveled) – 2 teaspoons baking powder – ½ teaspoon baking soda – ½ teaspoon salt – 1 cup (240 ml) buttermilk (room temperature) – ¼ cup (60 ml) canola or vegetable oil – 1 tablespoon pure vanilla extract – 1 cup (2 sticks, or 230 grams) unsalted butter (softened) – 2 cups (400 grams) granulated sugar – 4 large eggs (room temperature)



Preheat oven to 350°F (180°C). Prepare two 9-inch round cake pans with nonstick spray and parchment paper. Mix cake flour, baking powder, soda, and salt in a large bowl.


Oil, vanilla, and buttermilk in a large dish. Mix butter and sugar in a stand mixer with the paddle attachment or a large basin with a low-speed handheld mixer.


After adding all the sugar, mix on medium speed for 4–5 minutes until light and fluffy. After adding each egg, scrape the bowl's bottom and sides.


Three times on low speed, switch dry and buttermilk. Add items without overmixing batter. Mix by scraping the basin bottom and sides with a rubber spatula.


Divide the batter evenly between the two cake pans and spread it evenly. Bake cakes for 28–32 minutes until a toothpick inserted into the center comes out clean. 


Allow to cool in pans for 20 minutes after removing from oven. Cut around the cakes, then carefully remove them from the pans and cool on a wire rack.
